About The Potato
The Potato food truck began operations in 1995 in McCarthy, Alaska. Their featured food? Potatoes! It’s a vegetable that is affordable and keeps well without refrigeration in the remote community. The current owners purchased the food truck company in 2007, opening The Potato full-service restaurant in 2015. The restaurant is only open in summer, capitalizing on the visitors that come to the Wrangell-St. Elias National Park and Preserve, accessed via McCarthy. The Potato hosts concerts and community events, feeding thousands each summer. In 2014, they opened a second location in Valdez, Alaska – The Roadside Potatohead Too. And in 2018, The Potato partnered with the beer and liquor store La Bodega to launch a pop-up restaurant in Anchorage, La Potato.

In 2019, Alaska Growth Capital provided an SBA loan to The Potato to refinance existing debt and for improvements to finish their McCarthy restaurant building.
